My inspiration came from my mom’s pork chops with mushroom gravy that were on regular rotation on our dinner menu when I was a kid. I’m sure that many of you know exactly what I’m talking about. I think there were a lot of pork chops with mushroom gravy happening in suburban neighborhoods across America back then.

They are sold in a 4-pack and you’ll only need one for this recipe. The individually vacuum sealed packaging makes it very easy to snip one off and throw the others in the freezer.

First, let’s mix together the basis for the creamy-licious mushroom gravy. Yep, you guessed it, good old Cream of Mushroom Soup to the rescue! In the Crock-Pot, or in this case, In the Ninja it goes.

These dry minced onions are an important flavor component in this gravy. They add a distinctive flavor that I think is absolutely necessary. Fresh chopped onion would add more texture than I want in the creamy gravy so go with the dry minced.

The other components to the gravy – dry sherry, onion powder, garlic powder, thyme, paprika, dry parsley, and fresh ground pepper. Whisk this mixture together and turn the unit to LOW.

Sear the pork roast in some olive oil over medium-high heat to give it a little color on both sides. Season with a little salt and peppa while you’re at it.

Transfer the browned roast to the mixture in the Crock-Pot. Cover, and let it cook for 8 to 9 hours on LOW. If you want to speed things up, cook it on HIGH for 6 to 7 hours.

This is a very lean cut of pork so you won’t end up with a grease laden gravy and there will be no need to skim any fat after the cooking time. It works beautifully.

It’s ready when it is fork tender.

Transfer the roast to a cutting board and it will basically begin to fall apart as you cut into it. This is a very good thing.

Whisk together 1/3 cup milk and 3 tablespoons cornstarch and add the mixture to the gravy.

Stir till thickened  This worked fine for me in my Ninja, but, if the mixture doesn’t thicken to your liking, transfer it to a saucepan and place it over medium heat. It should help the thickening process.

I feel the need to serve this with mashed potatoes so I have something to drench with the lovely mushroom gravy.

There’s nothing like a good Crock-Pot meal on a lazy Sunday. Grab a package of those pork roasts and give it a try.

This pork roast is another one of those recipes where I throw all of my ingredients into my slow cooker and then let it do all the work for me while I take all the credit for it. Nothing wrong with that, is there?

Please say no.

Because really, someone had to think to buy the pork roast and then put it and just the right blend of things with it into the slow cooker in the first place, right? And then figuring out exactly how to cook it in there so that it isn’t tough? I think it really is a fair partnership that my slow cooker and I have going on.

Speaking of the right blend of ingredients, well, for this recipe there are only a handful. I’ve found that less is more with some recipes and keeping them super simple makes them all the more enjoyable.



There are just a few tricks that I’ve found that I want to share with you so you’ll be loving this pork roast as much as we do.

1. Shoulder Blade Roast (Boston butt). This is just my opinion, but I prefer to use a shoulder blade roast or Boston butt roast when slow cooking for an extended period – like in this recipe. I think these cuts of meat have just the right combination of fat to meat to allow the roast to keep its flavor and become extremely tender when cooking for an extended period of time. This also makes delicious pulled pork in my humble opinion.

2. Low and slow. I cook my pork roast looooow and slooooow. Trying to rush this cut of meat just isn’t good to me. I normally cook my pork roast in my slow cooker for anywhere from 8-10 hours. Yep, you read it right.  I like to put it into my slow cooker as I’m going to bed and then waking up to supper being ready before I even start breakfast. However, usually, I’ll leave it on warm with the liquid that cooked off while it cooked overnight still in the slow cooker and let it “steam” in the slow cooker for another 4 hours or so. Those roasts will absolutely without a doubt melt in your mouth!

3. Keep it simple. This pork roast recipe doesn’t include a ton of ingredients. It’s simple. Boston Butt, Worcestershire, and whatever dry rub I’m loving at the moment. I don’t even add any other liquids.

In China, it is thought that pork is bad for you unless it is cut into small pieces and marinated in vinegar before cooking in pork fat. Pork and pork fat together form the number one single source of calories in the traditional Chinese diet. Owning pigs is considered wealth, and a crucial component of sustainable rural subsistence even today.
In Argentina and the Philippines, pork is traditionally marinated in vinegar. In India, pork is soaked in yogurt before seasoning and cooking. In Mexico and Central America, it is typical to marinate pork in orange or lime juice. And here in America, we have a long tradition of pickled pigs’ feet and vinegar-marinated barbecue.
The key to properly preparing fresh pork lies in using an acid to marinate the meat prior to cooking. Vinegar, citrus, or yogurt provides the acid that breaks down the meat so that it remains tender and succulent—even after you cook it thoroughly for safety.
Like brining and drying your nuts and seeds, or soaking your grains in whey, marinating pork may also have the added benefit of improving its digestibility and reducing its inflammatory properties. This does not surprise me; our ancestors were pretty smart, after all.
Whether cooking ground, chops, ribs, loins or roasts, you should always prepare an acid marinade for your fresh pork. This could be as simple as a 12–24 hour soak in vinegar and water (2:1), plus some sea salt, or it could be a more elaborate marinade with seasonings and spices to make dinner extra special. If you have a thick piece of meat or a roast, be sure to score it so the marinade can penetrate deep within.
Based on what I now know about traditionally marinating fresh pork, I made the following slow cooker pork shoulder recipe the other night, and even my super-picky kid came back for more. It was hands down the best roast I had ever made or tasted, and I think you will enjoy it too!
