For the past few months I have been rather obsessed with making pork chops in the slow cooker.

Pork chops.

I don’t know why it’s pork and not chicken or beef, but ever since Adam’s mom was in town right after Grayson was born and cooked us the most amazing pork chops, I have been addicted. Pork chops are not only super versatile, but also usually pretty affordable. I love to pick some up at the store to throw in the freezer for quick filling dinners.

There’s so many ways to cook pork chops — my absolute favorite way is a Nigella Lawson recipe that involves hard cider, a lot of cream and gnocchi on the side — but lately I have {obviously} been using my slow cooker a lot. I thought I appreciated that thing before, but as a new mom I have to say it’s the best kitchen appliance ever invented. The evenings are still Grayson’s fussy time, which means mama has maaaaaaaybe 20 minutes to throw together dinner before a meltdown occurs.

This crockpot recipe is a for sure crowd pleaser. I love recipes using apple butter  so this seemed like the perfect dinner for my family.



This recipe defines the smell of fall comfort food. My house smelled amazing while this was cooking in the crockpot last week.

Recently we went on a field trip with our twins’ Mothers Day Out group. The trip took us to a local apple orchard here in the metroplex. We picked apples, learned about honey and bees and purchased some apple butter.

Other than eating it on warm biscuits, I had no idea how I was going to utilize this delicious jar of goodness.   So I reached out to my Facebook readers for some ideas and they shared plenty.

And that my friend, is where the idea for this recipe came from. And of course, I wanted to crockpot-it! It just makes life easier, ya know.
I’ve been making quite a few pork recipes lately  and this time Crock-Pot Easy Italian Pork Chops is what I came up with.  Currently at my house it’s mission “use up all the frozen meat in the freezer” before Thanksgiving gets here and I need to store a turkey.  So I’m not planning ahead like I normally do.  I’m pulling out the meat, letting it thaw and then trying to figure out what I can come up with, with the ingredients I have on hand.  It’s a fun game.  I’ve got an excess of Italian Dressing that needs to be used, and I hadn’t used it in the crock for quite a while, so I decided to incorporate it into the recipe.  Paired it with some bread crumbs and onions and we had a recipe.  Yes it’s that easy.  It was absolutely delicious.  We didn’t need any extra salt or pepper and I know when my kids come home the next day from school and are fighting on who gets to eat the leftovers from the night before, that it’s a winner!  Pork Chops are something my family enjoys when I make them, and these are some of our other favorites, here and here.
