Here’s a recipe I experimented with until I got it just right. It’s so nice to prepare the ingredients the night before, set it to cook, and wake to a warm breakfast. Enjoy!
If you're the type who wakes up in the morning with just enough time to get ready and get out the door to work or school, you may want to eat breakfast but the thought of cutting into your sleeping time isn't very appealing either. Get your crock pot ready—with five minutes of prep, you can enjoy a fresh hot breakfast in the morning that cooked while you slept.

Even though I work from home, I have a terrible time cooking breakfast in the morning before I have to start working, so when I tried this trick myself, I was amazed at how little prep was required and how great the payoff was when I woke up the next morning.



You'll need a crock pot, a smaller ceramic bowl that will fit inside the crock, and some aluminum foil. Ball up the foil and put it in the bottom of the crock pot. Put the smaller bowl on top of the foil, so there's space between the bottom of the smaller bowl and the bottom of the crock pot. Add your oats—I found steel cut works the best, about 1 cup to 4 cups of water—to the smaller bowl, along with a pinch of kosher salt and any dried fruit or anything else you want to cook overnight with the oats. Add water to the oats, and fill the crock pot about halfway with water.

Turn the crock on low and go to bed. By the time you wake up, the smaller bowl will be full of ready-to-eat oatmeal. Spoon it into a bowl, add your favorite oatmeal toppings or flavorings, and you have a piping hot, nutritious breakfast, and all you had to do was save enough time to eat it. Steel cut or even "old fashioned" rolled oats are so much better than instant. What I do every morning is start some black tea w/ cloves going in my coffee maker, put some skim milk on to boil and load it with equal parts cocoa and sugar, a dash of cinnamon, a pinch of cayenne and a pinch of salt. When everything is mixed, I pour off a bit to add to the tea (into the mug I'll be drinking from later) and add back a bit of OJ if I have it. When it boils, add old fashioned oats and lower the heat for five minutes, during which time you can sip the tea that just finished and/or cut up a banana to add to the pot.

Agreed - a lot of people knee-jerk to a trick like this and say "oh, but instant takes no time at all you can just put it into the microwave!"

Sure, if you want a crappy breakfast. But there's nothing like waking up in the morning to a hot crock pot full of steel cut oats, ready for whatever toppings you'd like in it. :) I love your recipe, too.

If you have a rice cooker with a porridge setting, you can use that too. I find about 3:1 water:steel cut oats is my favorite ratio.

Oatmeal also reheats well if you add water or milk to it when reheating, so making a big batch on the weekends can feed you for the week from the microwave.

In Modernist Cuisine, they use a mason jar inside of a pressure cooker to cook thick, moist foods quickly (onions, polenta, etc). This bowl-in-a-slow cooker method seems very similar, though if your batch is big enough, it's probably overkill since a slow cooker probably won't scorch your food unless it's super, super thick, unlike the pressure cooker.

I've been pondering using my rice cooker to do the same thing - I just stumbled on this crock pot recipe, tried it, and seriously, have been enjoying a nice hot breakfast for the past two mornings that I set up the night before.

Also, great tips on reheating oatmeal, too, thanks!

Got to this through Bittman's post on the NY Times a while ago.

If you don't want to leave a slow-cooker on all night (or you just don't have one!) this works- it's quick and you get something much better and healthier (unless you add a lot of sugar and other things) than any packet will give you.

Very nice - excellent alternative - and a great way to pre-make your oatmeal so you can take it with you or make it anywhere. I dig - in fact, the more I read this, the more I'm in love with it. I wonder if we've covered the idea before... :)

Frankly, I'd rather just cook a pot of steel-cut oatmeal on Sunday nights, portion it out into containers and grab one with some fruit in the mornings. Two minutes in the microwave and I've got breakfast. For those of us who don't have time to clean up a slow cooker in the mornings...

The method above is actually very little-cleanup. The slow cooker itself is just full of water, and you'd want to soak the inner ceramic bowl anyway (or you can just toss it in the dishwasher.) Although cooking in advance is always a good option too.

LOL - you assume I'm coherent enough in the morning to FIND the dishwasher! I envy those people who get up early enough to read the paper and leisurely drink coffee. It's all I can do to shower, grab my stuff (properly set out the night before so I don't forget anything), and make it out the door.

I got a box of steel cut oatmeal and I've been doing this for the past 2 weeks. I usually add 1 cup oats to 4.5 cups of water and let it go overnight (~10hours). With the extra water, it is less likely to burn and I get 3 servings of oatmeal. I add maple syrup and cranraisins. With a serving of fruit, it usually keeps me full until lunch.

I haven't had a chance to drive to Lancaster, PA where I hear the steel cut oats are much cheaper than what I've been paying.
