For the past few months I have been rather obsessed with making pork chops in the slow cooker.

Pork chops.

I don’t know why it’s pork and not chicken or beef, but ever since Adam’s mom was in town right after Grayson was born and cooked us the most amazing pork chops, I have been addicted. Pork chops are not only super versatile, but also usually pretty affordable. I love to pick some up at the store to throw in the freezer for quick filling dinners.

There’s so many ways to cook pork chops — my absolute favorite way is a Nigella Lawson recipe that involves hard cider, a lot of cream and gnocchi on the side — but lately I have {obviously} been using my slow cooker a lot. I thought I appreciated that thing before, but as a new mom I have to say it’s the best kitchen appliance ever invented. The evenings are still Grayson’s fussy time, which means mama has maaaaaaaybe 20 minutes to throw together dinner before a meltdown occurs.

These pork chops are a spin off another recipe I’ve been making a lot lately, maple bourbon pork chops. Well, I ran out of bourbon so I used mustard and man, did they ever turn out good! Adam gobbled these up at record pace and ate what little leftovers we had for breakfast.
I am frantically trying to share with you all of my slow cooker/soup recipes I have in queue before the weather turns warmer (which for some has probably already happened but for me, alas, it has not). I couldn’t let another minute slide before offering up this amazing slow cooker recipe for you to make.

Probably one of the best pork recipes I have for the slow cooker, the pork chops in question bathe in a simple, rich sauce that has an ending depth of flavor that belies the every day ingredients. Thanks to the quick cornstarch slurry in the final steps, the sauce becomes more like a glaze that envelopes the tender pork in a delicious, mouth-watering gravy.

What To ServeThese are perfect with this brown rice and a nice green veggie.

Please make this. And please, brown the pork chops before adding to the slow cooker. And please, don’t omit the red pepper flakes. You may reduce them to a pinch, but the dish needs them. And please try not to lick your plate when you are done eating.

So that is how I came up with the idea to use pork chops and brussels sprouts. I love brussels sprouts and I know not a lot of people do so feel free to use something else like carrots.

After layering my items I went out for the day and came home to a delicious meal and all I had to do was get it out of the crockpot onto my plate and enjoy!  I love to serve this with Sour Cream Rolls

Need quick and Simple? Here you go! This recipe has been circulating around the facebook page for a while, and has received rave reviews. We wanted to make sure that it was brought to the attention of everyone who was looking for “quick and easy dinners”, because this one really fits the bill! We served ours on a bed of mashed potatoes, but it would be great on top of rice, or egg noodles also! The meat literally falls apart, and the gravy is delicious!
