I've won two local chili contest with this recipe, including one that had a Texan on the judging committee. If a Texan can give my chili a "thumbs up," it must be great! Remember there are no beans in a true Texas chili, but I like to add some beans, but not too much. This is one of those recipes that I just do. I've estimated the amount of each ingredient I have used in making this recipe below. If you want to add more or less of an ingredient (or even leave one out), feel free to do so. It is very hard to "wreck" a chili con carne.
Using a crock pot to make chili gives you the best of both worlds...the ease of the crockpot and the slow cooking that chili lovers swear by. Spices slowly permeate the chili; meat or meatless, with beans or without.  On game day a crock pot gives you an easy way to keep the fan favorite hot and fresh. Try any of our crock pot chili recipes or crock pot chili dips for a hearty meal any time of the year.

Those last two are usually from clips on You Tube, because we don’t have cable and I generally don’t stay up late enough to watch Jimmy Fallon when it airs.
Anyway, I was looking specifically for a Crock Pot Chili recipe and ran across this gem, originally posted over at Martha Stewart. According to the source, it was from a Martha show back in 2009. I did not see it, but can only imagine Jimmy was his usual charming, funny self. It doesn’t seem fair to me. He gets to hang out with Justin Timberlake dreaming up history of rap performances and oh yeah, he can cook.

Chili is about as American as Apple Pie and middle aged men showing up to 4th of July BBQs in jorts. (I love mentioning  the “beauty” that is Jorts whenever I possibly can, regardless of relevancy). According to Wikipedia, Chili originated in San Antonio and was popularized at a hell of a party in Chicago called the Columbian exposition of 1893. Like all things that become popular, people from all over the United States  immediately tried to cash-in on the Chili’s success by ripping the recipe off and copying it. But like a game of telephone, the recipe didn’t quite make it to a destination in its original form, leading to varying kinds and tastes of chili in different regions of the United States. The various kinds of chili include : original Texas style chili , Cincinnati Chili, Coney Island style chili, California black-bean chili, white chili,  New Mexican Pork Chili Verde and the list goes on and on and ON!!!  Actually, not really…those were the only chili variations I could find.

But anyways : the recipe !

This is a crazy-fantastic Crockpot chili recipe that’s been passed  down  in my family for generations. My Great Grandma taught me how to make it just a few days ago and was so excited when I asked her how to make it. It was pretty cute… Actually that’s a lie. My Great Grandma died in the early 1970’s, crockpots likely weren’t around when she was alive, and she was Irish so the most flavorful food she ever made was probably boiled potatoes or if she was real adventurous: wheat bread.

But hey people always brag about using their Grandma’s cookie or meatball or pasta sauce or cheesecake or chocolate chip cookie or whatever  grandma recipe and how amazing their grandma’s recipe is and how it’s “the best,” despite no actual judging or quantitative evidence to back up their claims. And seriously 9 times out of ten, their grandma’s recipe blows. So I figured I’d one-up those assholes by claiming I got this recipe from my Great- grandma, so I’m still going to keep the title.

But as (just about ) always, I modified it, mostly getting tips and insights from other chili recipes I found and some ingredients that I thought would help make this chili taste good.
