Reality has set in. Our weather has shifted from being in the 70′s at the beginning of the week to a forecast of snow flurries – all within a 4 day period.  Yes, I know it is Ohio, but I never seem to get used to that drastic change.

This means that it is time to let the grill have a rest, and get the stove top turned on. And what better way to warm up than with a tasty bowl of soup.  In the past we have posted our recipes for our Garden Chili, Vegetable Soup, and Tomato Soup. But this time I thought I would make a classic dish with a new twist. Potato and Leek Soup – made in the crock-pot.

This recipe is extremely easy – requiring only a few basic ingredients. You can make it the night before and turn the crock-pot on when you leave in the morning. When you walk back in the door later that day, you are only minutes away from a hot, healthy meal. And for those who don’t eat dairy products – no worries – the natural creamy texture is delicious without the heavy cream and butter called for in many potato soup recipes.

And one last note on using leeks.  Leeks are part of the onion family that can be grown in almost any environment.  They have a milder flavor of traditional green onions.  Just make sure you rinse them well because between the layers of the leeks dirt/sand will settle.  And if you can’t find leeks in your area – simply substitute green onions.

This is one of those posts where I reflect on all the crockpot Mexican recipes I’ve made in the history of Pinch of Yum and realize that they are all extremely similar. And then I reflect on the fact that I’m very okay with that. There’s a reason I love these recipes, and it’s because they are generally really simple and still serve up some really delicious dinners. We’ve got lots of chicken, beans, pork, and spices up in here.  A little extra corn, cheese, avocado and cilantro, and I’m ready to call it a day.

Crockpots are da bomb. And if you’ve been around for a while, you know I go nutso for Mexican food. When they come together, I start to doubt that I will ever eat anything besides spicy meat and beans for the rest of time.

So in honor of my love of Mexican crockpot food, here are six of my current favorite Mexican crockpot recipes.




enchiladaSkinny Chicken Enchiladas: These babies are so easy to make! They’re actually called enchiladas (by me) even though there’s no enchilada sauce. Guess what? You don’t even need it. Basically this is all of your favorite Mexican ingredients slow cooked in the crockpot, wrapped up in a tortilla, and topped with avocados, crema, cilantro, and Cotija cheese. Oh, I miss that salty, creamy, crumbly Cotija cheese. I sense a sweet reunion coming up in six weeks.

chalupasCrockpot Chalupas: What is a chalupa, anyways? All I can think of right now is Taco Bell, and I haven’t ever even eaten at Taco Bell. Ever. !!! I am just realizing that right now and I’m not okay with it. This is pork, pinto beans, and lots of Mexican seasonings cooked in the crockpot and served over a golden crispy baked tortilla (yep – baked! no frying necessary!) and definitely topped with sour cream. Crunchy, creamy comfort food.

carnitasEasy Crockpot Carnitas: What can I say, really? These take the cake. Er, the crock. They are sosososososo good. The Philippines is a nation of pork, and I take full advantage of that often by making this deliciously juicy shredded pork and eating it on anything and everything. Like a tamale pie. And I know you think they already taste good straight out of the crockpot but you do not want to miss the broiling. Crispy, crunchy, perfectly browned slow-cooked pork. <3

polenta-pieMexican Polenta Pie: This is crockpot Mexican pork and beans (kinda like the chalupa filling) topped with creamy polenta and cheese and baked to gooey perfection. You will be full for the rest of time. PS. The Cheese.

I have some vegetarian tendencies when I cook, not including times when I’m eating platefuls of carnitas, and not including times when I use the crockpot to make this Mexican chicken that I can use on burritos, tacos, tostadas, or straight up with chips. Do you love chips? Me, too.



dipChili Cheese Black Bean Dip: I have to tell you something. This is REALLY good. If you want an awesome dip that all your party guests will become addicted to, go for the chili cheese black bean dip. I’ve seen people literally just post out at the mini-crockpot station dipping chips straight into the pot for more of this stuff. It’s game party food. Are there any, like, games coming up? Okay, just party food. For your face.

I was trying to make a new recipe one night and kept realizing I was out of ingredients, so with all the substitutions I came up with something totally my own! guess that's how it happens...

Barbecue Pulled Chicken is a lean and delicious alternative to traditional pulled pork. Plus, we reduce added sugar and salt by making our own tangy tomato-based barbecue sauce. Here's how to make it in a slow cooker with very little hands-on effort. In a 6-quart slow cooker insert, combine one 8-ounce can of reduced-sodium tomato sauce with a drained 4-ounce can of chopped green chiles, 3 tablespoons of cider vinegar and 2 tablespoons of honey. Next, season the sauce: 1 tablespoon of sweet or smoked paprika, 1 tablespoon of tomato paste, 1 tablespoon of Worcestershire sauce, 2 teaspoons of dry mustard, 1 teaspoon of ground chipotle chile powder and 1/2 teaspoon of salt. Stir everything together until smooth. Trim 2-1/2 pounds of boneless, skinless chicken thighs to cut down on calories and saturated fat. Add the thighs to the sauce in the pot. Next, add 1 finely chopped small onion and 1 minced clove garlic and stir until the chicken is well coated. Put the lid on the slow cooker and cook on Low until the chicken pulls apart easily, about 5 hours. Transfer the chicken thighs to a cutting board and use forks to shred the meat. Return the chicken to the sauce and stir it until the meat is well coated. Then it's ready to serve. I’ve tried a ridiculous amount of crock pot recipes, and this is by far the best (and easiest) way to slow cook a whole chicken until it is falling-off-the bone delicious. Another great trick (that I learned from a friend!) is that after you pick off the good chicken meat you can leave the bones in the crock pot to make some stock. I usually start the chicken stock after dinner by filling it to the top with water, and then adding whatever I have on hand…bay leaf, carrot, celery, onion, parsley and/or thyme. Even if I am missing parsley or celery I still make it anyway, and it always turns out just fine. If you don't have red or yellow onion, use what you have on hand. Same goes for the bell peppers. Use all green or red if that's what you have. There's an array of colored peppers out in the markets right now. The Lexington Co-op (807 Elmwood Ave., Buffalo NY 886-COOP) has locally grown orange and purple peppers that can be substituted in this recipe for pepper steak in the crock pot.

1. Place chicken in a 6-quart slow cooker. Top with carrots, celery, parsnips, sweet potato and scallions. Cover with chicken broth and 1 cup water; season with sage, salt and pepper.

2. Cover slow cooker. Cook on HIGH heat for 4 hours or on LOW heat for 6 hours.

3. After cooking, uncover pot and remove chicken to a cutting board. If necessary, raise temperature to high. Add gnocchi, cover and cook for 10 minutes. Meanwhile, let chicken cool slightly, then shred meat from bones, discarding bones.

4. Once gnocchi have cooked, return chicken to pot. Stir cornstarch-water mixture, and add to pot. Cover and cook 10 to 20 minutes, until thickened slightly. Add hot sauce to taste before serving.

Ingredients
6 boneless, skinless chicken breasts
 6 slices Swiss cheese
 1/4 c. Parmesan cheese
 1 tsp. pepper
 1 can cream of chicken soup
 1 chicken bouillon cube
 6 slices ham
 1/4 c. flour
 1/2 tsp. salt
 1/4 c. oil
 1/2 c. water
Preparations
Flatten chicken to 1/8 inch thick. Place ham and cheese on each breast. Roll up chicken and secure with a toothpick. Combine flour and seasonings. Use this mixture to coat chicken. In skillet, brown chicken in oil. Place chicken in slow cooker. Combine remaining ingredients and pour over chicken. Cover and cook on LOW for 4 to 5 hours.

I had to kiss a lot of frogs before I found my prince, Marlboro Man. And I had to make a lot of really bad pot roasts to finally figure the whole dadgum thing out…and figure it out I did, thank the Lord above. And the verdict? Pot roast, when made according to a few fundamental rules, can be a totally delicious addition to your repertoire. There are lots of different, equally delicious ways to make pot roast. Today’s version is the first of many I’ll be profiling here.
The meat you use is important. My favorite roast is the chuck roast; it has wonderful marbling throughout the meat, and when given an ample amount of time to cook, chuck roast winds up being tender and melt-in-your-mouth delicious. To understand the importance of adequate cooking time, you must understand that these tougher pieces of meat have lots of tough connective tissue that will only soften when cooked at a lower temperature for a long period of time. You can’t rush a pot roast; you’ll be disappointed with the result if you try. But if you reach deep down into your soul and find your patience—at least, the patience that was given to you by your Maker to relate to beef-related circumstances in your life—you won’t be disappointed.
Let’s just jump right in and embrace the pot roast together, okay?

The Cast of Characters: Chuck Roast, onions, carrots, salt, pepper, beef stock, fresh thyme, fresh rosemary (if you have it; if not, dried is fine). Optional ingredients: red wine, garlic, button mushrooms.

Behold the chuck roast, my friends. See what I mean about the beautiful striations of fat throughout the meat? Mmmmm…it’s a really good thing. Just remember: Marbling equals tenderness AND flavor.

I love to use the word “striation” at least once a week. It throws people off and makes them wonder why they don’t know what that word means, and it makes me feel smart. Even though I really don’t know what it means either.

Okay, first: grab your olive oil. It really doesn’t have to be extra virgin, and if you’re feeling particularly naughty, you can add a couple of pats of butter. But my bottom feels big right now, so I’m giving up butter for thirteen hours.
I’m sure it will help.

First, heat a large pot/dutch oven over medium high heat. Then add 2 to 3 tablespoons olive oil. (Or combo of butter and oil, unless your bottom feels big, then abstain for thirteen hours like me.)

Now generously salt your chuck roast. (Mine was 2.5 pounds, which is a bit small for me. 4 to 5 pounds is much better.) I like to use kosher salt because it’s flat and flaky and adheres to the meat better than regular salt. But plain salt is fine, too.

But whatever salt you use, don’t hold back—salt away, baby.

Now add a bunch of black pepper. I finally bought myself a new peppermill after my boys commandeered and destroyed my wooden one. And I think it’s made of titanium or something, which means it’s punk proof.
Unless they find Marlboro Man’s blow torch, which is always a possibility.
In any event, pepper the meat generously. You’re seasoning a lot of meat here.

Now take a couple of onions…

And cut them in half from root to tip.

Then cut off the tops, cut off the bottoms, and peel off the outer layer. If you’re an onion addict/freak, feel free to use more.

When the oil in the pot is very hot but not quite smoking (and heck, if it smokes, it’s no big deal)…

Add in the onions.

And brown them on one side, about a minute. (The oil should really sizzle, like Marlboro Man.)

Roasted Chicken

Forget oven roasting the chicken. Check out this recipe for throwing the entire chicken in the crock pot instead. The result is a delicious fall-off-the-bone dinner.

This time of year brings all sorts of added rushes. Everyone has to get back into the swing of the school schedule. There is drop-off, pick-up, after school activities, sports, playdates, homework groups, music lessons…..

As a working mom, I know that added stress of packing lunches AND planning dinners everyday is enough to push a sane person over the edge.  This is why I rely so heavily on my crockpot. It really is a busy family’s best friend.

So you don’t have to search around the endless recipes on Google or Pinterest, I thought I would put together a group of my favorite 30 Easy Crockpot Recipes for the family. These are all in my regular rotation and are loved by all.

This Thanksgiving, avoid pesky culinary time crunches and oven space shortages with one simple solution: crockpot cooking. While the turkey sits in the oven you’ll save precious space and prep time by letting your side dishes slow cook to perfection until dinner.

1. Traditional Holiday Stuffing

No Thanksgiving spread is complete without stuffing. The Chic Site’s variation incorporates all the staple ingredients of the dish, relying on notes of thyme and sage for a distinct and subtle finish. This stuffing requires about 4 to 5 hours in the crockpot before dinner, so try to finish your preparation by around lunchtime on Thanksgiving Day (depending on when your guests plan to eat, of course). The addition of a foil ring to your crockpot will help prevent burning (details on this below). Recipe yields 5 to 6 servings and can be doubled easily.

Ingredients:

1 pound white sandwich bread, cut into bite-size cubes
1 (8-ounce) breakfast sausage, removed from casing
3 tablespoons unsalted butter
1 medium onion, chopped (about 2 cups)
¾ cups celery ribs, split down the middle and chopped
1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)
1½ cups reduced sodium chicken broth
1 large egg
½ teaspoon kosher salt
¾ teaspoon black pepper
Chopped chives, thyme, and sage, as garnish
Directions: Preheat oven to 300 degrees Fahrenheit. Place cut bread on a baking sheet. Bake for 25 to 30 minutes until bread is stale and dried out. Toss bread midway through baking to ensure even cooking. Alternatively, cut bread ahead of time and leave out on counter for a day or two to dry out. Place bread in a large bowl. Set aside.

Grab a long piece of foil. Fold it a couple of times over itself to create a band. Line the sides of the slow cooker pot with the foil. Lightly coat with nonstick spray.

In a large skillet, heat about 1 tablespoon of oil. Add breakfast sausage (removed from casing). Cook until sausage is brown and cooked throughout. As sausage is cooking, break into small chunks using a wooden spoon. Drain cooked sausage and add to bread. Keep all the browned bits in the pan.

Using the same pan you cooked sausage in, add butter and set over medium heat. Once butter has melted, add onions and celery. Cook until onions have softened. Add chopped thyme and sage. Toss to combine and cook until herbs are aromatic. Add about ⅓ cup of chicken broth. Use a wooden spoon to scrape up any of the browned bits of sausage on the bottom of the pan. Cook until broth comes to a boil. Remove from heat and pour mixture on top of bread-sausage mixture.

In another bowl, whisk together remaining chicken broth, egg, and salt and pepper. Pour over bread mixture and gently toss to combine. Make sure all the bread pieces are coated.

Transfer mixture to prepared slow cooker pot. Cover and cook for 4 to 5 hours on low setting. Make sure mixture has reached temperature of at least 165 degrees Fahrenheit to ensure egg is cooked. Turn off slow cooker and remove foil. Transfer stuffing to serving dish. Garnish with additional herbs.
