I had never heard of Mississippi Pot Roast, let alone, Crockpot Mississippi Pot Roast.  A girlfriend posted something about it on facebook and it piqued my interest and before I knew it, I was looking up Mississippi Pot Roast and found a TON of links. So since there are a TON of them, I will just say I was inspired by all.

This was by far one of the easiest recipes I’ve ever done. It’s one of those dump and cook crockpot recipes that really do give your slow cooker the crown it deserves. Just put the ingredients in, turn it on, come home 8 hours later to a delicious meal. Sounds pretty heavenly doesn’t it?

When I asked my husband to pick up a beef pot roast at the grocery, (yes, he does most the grocery shopping because he likes buying all the on sale starbucks coffee without me telling him we don’t need anymore since we have 10 lbs in the freezer already) I think he practically did a cartwheel out to the car. The man loves beef and he knows I hate cooking it.

He brought the roast home and was very interested as to WHEN I was planning this meal.
I put this meal together in about 5 min one morning when I knew our evening would be a bit hectic. I put a few baked potatoes in the oven an hour or so before dinner, steamed some veggies and had what I call a Farmer’s Dinner. Meat, Potatoes and Veg…..the only thing missing was the bread and butter.

Like many of you, I grew up eating pot roast on a (very) regular basis. And while I will always love my mother's old-school version, I felt it was time for a little upgrade. I've nixed the "pantry helpers" and replaced them with Dijon mustard, maple, and balsamic for delicious take on a classic.

My mom, a busy wife and mother of three, adhered to a strict weekly dinner rotation consisting of "new American" classics. Her repertoire of recipes was quick, consistent, and — most importantly — didn't stir up complaints from the peanut gallery. She made no apologies about using convenience products to get food on the table, nor should she have. To this day, the mere thought of her cheesy chicken spaghetti and creamy beef stroganoff rouse a deep urge to be transported back to my youth.

Like many Southerners, pot roast and potatoes were a Sunday night tradition, and her recipe to this day is still my gold standard. (Its not-so-secret secret? Lipton's onion soup mix.) In all honesty I've never attempted her pot roast in my kitchen — I guess it's one of those memories I felt was better left alone. That said, all this Arctic weather of late has kept the old one-pot wonder on my mind. So I brushed off my dusty slow cooker, lonely from its creaky attic shelf, but instead of reaching for my mother's recipe binder, I decided to create a new pot roast tradition to call my very own.

This recipe uses my favorite cast of characters to create a rich yet homey dish. I've eaten one too many pot roasts on the dryer side, so my goal was a buttery, falling-apart piece of meat. The slow cooker is the ideal candidate for the job: low heat for a long time makes this recipe melt-in-your mouth delicious. And while my mom always cooked potatoes and carrots along with the meat, I wanted something a little more dressed up. Creamy stone ground grits provide a perfect foil for the savory gravy, while maple roasted carrots add just a hint of sweet. It may not be the same pot roast of my childhood, but I think my mom will approve.

Thumb through any New England cookbook from the last hundred years and you’ll be hard pressed to find one without an entry for savory Yankee pot roast. As essential to winter survival here as snow tires and a good pair of slippers, this classic combination of tender beef, seasoned vegetables, and rich sauce is comfort food at its best, earning it a spot on menus and dinner tables across America.
“Pot roast,” as a term for browned meat cooked with vegetables in a covered pot, began appearing in cookbooks in the late 19th century, but this method of slow cooking in liquid, known as braising, is centuries older. Tough cuts, such as beef chuck, short ribs, and brisket, lamb shanks, and pork shoulder, are braising favorites because they’re rich in marbled fat and connective tissue, which converts to gelatin over long, gentle cooking times to produce both tender meat and a silken sauce. Coming from the more heavily “worked” parts of the animal, they have more flavor, so a good braise gives you delicious meat cooked down to pull-apart perfection.

The process usually begins with searing the meat. This step doesn’t hold moisture in, as cooks once believed, but it does create wonderful flavor. In his memoir/cookbook Grandma’s Cooking (Gramercy Publishing, 1955), journalist Allan Keller reflected on boyhood memories of his Connecticut grandmother’s Yankee pot roast, noting that she began by browning the meat in a piece of suet “the size of a large coffee cup,” complimentary from the local butcher.

Once the meat is browned, pot roast is simmered in a mixture of stock and tomatoes, seasoned with sautéed onion and herbs. Then, during the final hour, the cook adds his or her choice of vegetables for the final, tantalizing hour. Onions, carrots, parsnips, turnips, celery, potatoes—any can be used. As the good bit of Yankee kitchen wisdom says, “Whatever’s on hand is what works best.” Out of the oven, the meat is fork-tender, the sauce rich and flavorful, and the leftovers (if there are any) ready for reincarnation in sandwiches, hash, pastas, and savory pies.

Whether the “Yankee” in Yankee pot roast is a nod to the dish’s American regional origins or (as some suggest) a joke about New England fru­gality, a good Yankee pot roast embodies the traditions of simplicity and patience rewarded. “Like any great masterpiece, a Yankee pudding, pie, or roast is not dashed off in a trice,” Keller warned. “But when the lid is lifted and the aromas drift through the kitchen, it is like the spring that follows a hard, cold winter.” We couldn’t agree more.
Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.

Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, bay leaves, thyme, allspice, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly, about 4 minutes.

Pour the gravy into the slow cooker. Cover and cook on low for 8 hours. The roast and vegetables should be tender.

Remove the roast and let rest for a few minutes. Discard the thyme stems and strain the vegetables, reserving the gravy. Toss the vegetables with half the parsley and season with salt and pepper. Stir the remaining parsley into the gravy and season with salt and pepper. Slice the roast against the grain. Serve the meat and vegetables on a platter, moistening them with some of the gravy; serve the remaining gravy on the side.
