Crazy schedules, long work hours, and tempting takeout menus make it tough to even think about cooking most nights during the week. Despite the inconvenience, firing up the stove or oven is almost always cheaper and healthier than ordering in or eating out. How about a compromise? Making dinner with a slow cooker — Crock-Pot is the go-to brand in the U.S. — is an easy way to get in all those vitamins and minerals without slaving over a hot stove for hours at a time. Most of these recipes involve mixing up ingredients and popping them into a slow cooker for a prescribed number of hours. Save even more time by starting some of these dishes overnight or first thing in the morning and reaping the delicious, healthy benefits later in the day.

Nearly 60 percent of American households today consist of only one or two people, yet most cookbooks don’t reflect this trend, with recipes designed for large families, yielding 6-8 servings. For individuals and small families who want to cook hearty, healthful meals but don’t want to deal with all the leftovers, Beth Hensperger has the solution. The James Beard Award–winning author follows up the best-selling Not Your Mother’s® Slow Cooker Cookbook with Not Your Mother’s® Slow Cooker Recipes for Two, a collection of 125 new recipes specially designed for the small slow cooker. As always, Hensperger’s innovative recipes call for fresh, healthful ingredients and continue to prove that the slow cooker can produce amazing meals. While the recipes yield the perfect amount for two or three people, there is no shortage of flavor with dishes such as Quick Hominy and Zucchini Chili, Moroccan-Spiced Tomato Chicken with Almonds, Lamb Stew with Lemon and Garlic, and Vegetable Polenta with Mascarpone Cheese. The slow cooker is an essential countertop appliance for busy cooks, and this is the only book on the market specifically written for the increasingly popular 1 ½- 3 ½-quart slow cooker. Not Your Mother’s® Slow Cooker Recipes for Two is great for the growing population of empty-nesters, working couples, singles, and small families who want the convenience of small slow-cooker cooking without sacrificing wholesomeness and flavor.

This can be great if you kids love to help (like mine now does), however, this wasn’t and isn’t always the case.

I love the taste of pumpkin coffee in Autumn but it can be expensive, I've paid $4.00 for a cup at my local coffee shop. This recipe is so delicious and easy to make, I can't believe I didn't think of it sooner. This whole batch of pumpkin coffee (12 servings) cost about $4.00- I'm going to take my crock pot to work and make it for the girls in the office, I think they'll enjoy it.

It’s not really a secret because a) I’m from Minnesota, the homeland of things like creamy delicious Wild Rice Soup, b) I’ve only posted it at least seventeen other times on the blog, and c) WILD RICE.

So this time the thing that makes it special is the Crockpot. This is Chicken Wild Rice Soup meets Chicken Bacon Wild Rice Soup mashing up into Crockpot Chicken Wild Rice Soup. Translation: life just got easy and I’m going to go watch Breaking Bad now while my dinner cooks in a large kitchen appliance without my supervision thank you very much.

By the way, I don’t watch Breaking Bad yet but I’m 99% sure that I’m going to start today. Yay or nay?

This is a perfect meal for the current state of our new kitchen. I want to tell you about our new kitchen in our new house, which I feel like I should mention is a foreclosure. So give her some extra compassion, okay?

It’s, um, how do I say this? Small.
Small = less stuff = maybe even a little bit freeing.
Small = less distance to walk to get to things and fewer places to clean. Just saying.
It has a real live window and I have my photography table set up in the kitchen. Never before, guys. THIS IS AMAZING.
It has a jumbo, awkward, 1980’s fridge and I bump into it at least eighty times a day.
The stove is gas. It says the word CALORIC on the panel. So thanks for that.
It has a window. Actually, two. Did I already say that? Hiphiphooray!
It has a big sink that holds lots of dirty dishes and keeps them out of sight.
It has a non-functional garbage disposal. Oh well?
It is begging for a remodel. We are in the fun planning phase where we make 3D blueprints to see what it will look like when we knock the ol’ kitchen wall down and make it my small dream kitchen. ♥

Back on topic. I was saying that this is perfect for the current state of our small kitchen because we don’t have everything all in order just yet. For example, I burned the Thanksgiving corn pudding because my oven was playing tricks on me, and no, it had nothing to do with Bjork hearing 475 instead of 425. And for another example, I keep forgetting boxes of kitchen stuff at our other house so I made frosting yesterday with a whisk attached to a drill. A DRILL. oh my gosh, I mean, really. What are we coming to?

But when everything else is chaotic, my steady and true Crockpot friend gives some stability and cooks us the most cozy, comforting dinner while I’m at work and making yet another run to the old house for the box with the hand mixer in it.

Crusty bread, this piping hot soup in a large bowl, and extra time on your hands. TIS

I have a firmly held belief that the most important lessons in life are learned in Kindergarten. For this reason (and many others) when my five year old speaks, I listen. Oftentimes she’ll say something that has me stifling a giggle (Katy Rose does not like for folks to laugh at anything she says right now unless she clearly states that it is a joke beforehand), but others she’ll speak something truly profound and in her innocence has no idea that she has just opened her mama’s eyes to wisdom once again.

Small Crock Pot Recipes Biography

This recipe was originally published in February 2011. I just updated the photos and added some recipe notes based on the many comments and questions I have received over the last few years. This recipe is a family favorite of ours and I hope you’ll enjoy it if you try it!

Whole Chicken in a Slow Cooker from TheLittleKitchen.net

My friend piqued my curiosity when she told me about her co-worker bringing in a slow cooker to work with just a whole chicken and slow cooking it for an entire day. She often brought her slow cooker in with some kind of concoction so she could bring dinner over to her friend’s house who was going through chemotherapy treatment. What a great friend, I’m sure her friend appreciated it. My friend told me their office often smelled really good during these days.

So when I was on the hunt for a chicken slow cooker recipe, I googled and found this one. It’s incredibly simple and the chicken goes into the crockpot in minutes. I added my own twist to it and guess what? The chicken is wonderfully moist and it’s very simple. After the chicken is done, you can throw it in your broiler to crisp up the skin. Carving the chicken is so easy because it just wants to fall apart. The breast comes right off the bone and is very easy to cut up. The chicken is really tender and flavorful and much easier than roasting a chicken in the oven.

I use a 3.5 to 4.5 pound chicken and it fits just fine in my slow cooker. I added the carrots and vegetables and the chicken rests nicely on them. Also, I added garlic and lemon. My favorite roast chicken recipe calls for garlic and lemon inside the chicken so I do the same when I make it in the crockpot.

This makes a wonderfully easy meal you can serve with mashed potatoes or rice and your favorite vegetable alongside the carrots and celery if you wish. And  I make chicken pot pies with the leftover chicken.

Updated: I recently did a lemon pepper version of this recipe & put together a video just to show you how easy it is to put together!

I put the vegetables in the slow cooker first. Then, prep the chicken.

Rinse the chicken with water and wipe it dry with a clean paper towel. Rub the outside of the chicken with garlic and place the garlic inside. Fold the wings back below the chicken.

Add the rub to the outside and inside of the chicken. And place the lemon quarters inside. I try to put the insides of the lemons up against the insides of the chicken, see how the outsides of the lemon quarters are touching?

Tie the chicken legs together with kitchen twine.

Place the chicken on top of the vegetables. This creates the best cooking situation for the chicken. Cooking a whole chicken inside of the slow cooker creates a lot of broth and resting the chicken on top of veggies keeps the chicken from failing apart too much.

I use turkey lifters to remove the chicken from the crockpot carefully. Place chicken in an oven safe dish or roasting pan & in the broiler for just about 4-5 minutes.

But it’s inevitable, the chicken does fall apart a little bit. The meat is so moist and tender and it’s honestly, the only way we make a roast chicken these days!
Ever wonder why Boston baked beans are called “Boston” baked beans? It’s the molasses. Boston has been tied to molasses since colonial days, when the city was a trade center for rum from the Caribbean. Molasses is used for rum production and is a by-product of sugar refining and was easily available to the colonists. And then there’s the Boston Molasses Disaster of 1919, when a huge tank of molasses exploded and sent a sea of the gooey stuff flooding the streets of the North End. I lived in the North End of Boston in the early 80s and at the time you could still pick up a faint scent of molasses on a hot summer day.
Now to the baked beans. Boston baked beans are by definition, slowly cooked. According to Shirley Corriher in CookWise (great book, btw), either sugar or calcium will make beans hard, even after long hours of cooking. Molasses contains both sugar and calcium, which is why adding molasses to a pot of beans will enable you to cook the beans for what seems like forever, without the beans getting mushy. But it also means that if you cook the beans in molasses to get that wonderful flavor, you have to cook them a good long time.
Although traditionally cooked in an oven, Boston baked beans lend themselves perfectly to slow cookers, which is the method we prefer here.
It's 2014: Why isn't my food ready the instant I want it? As a busy working parent, I wish I could just snap my fingers at mealtime and thereby summon a magic genie to whip up something healthy and delicious. I can't rely on my wife—she's as slammed as I am!

I don't want a repeat of my earlier years, when I lived off canned tuna and boiled eggs for months at a time. During one bout of contest prep, I ate the same thing every damn day: a head of lettuce, a pound of chicken, a dozen boiled eggs, and veggies all mixed into one big bowl with salsa. That was it … for 12 … straight … weeks.

When I got married, some kind soul bought us a Crock-Pot. What a revelation! This gadget works quick and easy: All you do is throw all the ingredients into the pot and let it do its thing. You're a lousy cook? Ha! You couldn't screw this up if you tried, especially because cooking times have a ton of leeway. Most meals might be ruined if you cooked them for an hour too long, but your only penalty in a Crock-Pot is that your meat becomes more tender.
