If you are among the nervous when it comes to cooking a Thanksgiving turkey, fearing you’ll under- or overcook it, here’s a solution: cook it in the slow cooker. Yes, you can! No, you won’t get a Norman Rockwell-esque golden bird with crisp skin, but you will get wonderfully moist, juicy meat that’s impossible to overcook and dry out. And if you’re trying to eat healthier through the holidays or are one to ditch the skin anyway, this cooking method is right up your alley. It gets better: there’s no need to baste, so you won’t be your turkey’s lady in waiting all afternoon, ensuring it’s regularly mopped with its own juices. The slow cooker does that for you. Will it fit? You’d be surprised what you can get into a 6-6.5 qt oval cooker. Of course if you’re looking for a smaller bird, a chicken would work very well, too.

There’s not much to it, actually. Start with a 10-12 lb. turkey (mine was 4.5 kg) and a 6-6.5 qt oval Crock Pot. Stuff it with bread stuffing as you otherwise would, or bake your stuffing separately and tuck a whole lemon, head of garlic halved through the middle, and handful of fresh herbs into the turkey cavity. Rub the skin with oil and/or butter and sprinkle with salt and pepper, and put it in the Crock Pot. Add a cupful of chicken stock or apple cider to the pot and tuck fresh herbs around it if you like. Put on the lid and if there are gaps, cover the lid with foil to seal them. Cook on high for 2 hours and then reduce the heat to low for 4-6 hours, until impossibly tender. No need to baste.

It won’t be as golden as an oven makes it – if you want to crisp up the skin, gently transfer the cooked turkey to a roasting pan, 9″x13″ baking pan or cookie sheet and put it under the broiler for a few minutes. (If you’re planning to remove the skin, do it after the turkey cooks – it’s easier, and helps keep flavor and moisture in.) Once the turkey is done, take it out and use the drippings in the bottom of the pan (there should be lots) to make gravy in the usual way. Tent the bird while it waits. Yet another bonus: you won’t need to perform surgery to carve it; it will practically carve itself.

Crazy schedules, long work hours, and tempting takeout menus make it tough to even think about cooking most nights during the week. Despite the inconvenience, firing up the stove or oven is almost always cheaper and healthier than ordering in or eating out. How about a compromise? Making dinner with a slow cooker — Crock-Pot is the go-to brand in the U.S. — is an easy way to get in all those vitamins and minerals without slaving over a hot stove for hours at a time. Most of these recipes involve mixing up ingredients and popping them into a slow cooker for a prescribed number of hours. Save even more time by starting some of these dishes overnight or first thing in the morning and reaping the delicious, healthy benefits later in the day.

After we’ve eaten about as much turkey as we can handle around Thanksgiving and Christmas, I like to freeze the rest of the meat and use it in various crockpot recipes during the cold winter months.

I often buy an extra turkey or two right after Thanksgiving when stores mark them down. I just stick them in the oven and cook them while I’m busy around the house. Once the turkey had a chance to cool, I set some of the meat aside for dinner that night, then remove the rest and chop it up for freezer meals. The remaining turkey carcass can be used to make turkey stock. The finished stock will last about 5 days in the fridge or 3 months in the freezer and it can be used instead of chicken stock or chicken broth in any recipe.

Crockpot Here are some of my favorite leftover turkey crockpot recipes. All of them are quick and easy to put together and practically cook themselves. Start them in the morning and come home to a hot, home-cooked meal at night.

Let’s start with one of my family’s favorites – chili. It is such a nice change from the traditional turkey dinner flavor. By day three we are usually tired of that and this chili is just perfect. I make a large batch and freeze any leftovers. You can also make this turkey chili with regular ground turkey.

Then of course there’s the always popular turkey and rice soup. We usually have some of that the day after Thanksgiving. I make the stock (see note above) that night or first thing in the morning and then use it to cook this soup in the slow cooker.

Or if you prefer, take a look at this turkey and noodle soup. It’s also delicious as a chicken and noodle soup when you don’t have leftover turkey to work with.

Last but not least, there are hot turkey sandwiches. They are just so much yummier than the plain old turkey and mayo ones. Give them a try and see  if you don’t fall in love with this cheesy version as well.

It's 2014: Why isn't my food ready the instant I want it? As a busy working parent, I wish I could just snap my fingers at mealtime and thereby summon a magic genie to whip up something healthy and delicious. I can't rely on my wife—she's as slammed as I am!

I don't want a repeat of my earlier years, when I lived off canned tuna and boiled eggs for months at a time. During one bout of contest prep, I ate the same thing every damn day: a head of lettuce, a pound of chicken, a dozen boiled eggs, and veggies all mixed into one big bowl with salsa. That was it … for 12 … straight … weeks.

When I got married, some kind soul bought us a Crock-Pot. What a revelation! This gadget works quick and easy: All you do is throw all the ingredients into the pot and let it do its thing. You're a lousy cook? Ha! You couldn't screw this up if you tried, especially because cooking times have a ton of leeway. Most meals might be ruined if you cooked them for an hour too long, but your only penalty in a Crock-Pot is that your meat becomes more tender.

THE CARNIVORE
I love a hearty breakfast, but half the time I just make a protein shake and head out the door unsatisfied. That's why a Crock-Pot omelet is freaking magical. I can prepare the meal right before I go to bed and awaken to a killer breakfast that's ready to go, even if I'm not. Now if I could only get that automatic coffee-maker working!
Easy slow cooker meal - can be put together in less than 15 minutes!

This turkey chili recipe is so easy to make and so delicious to eat. Made in a Crock-Pot (the brand name for a slow cooker), the smell of a home cooked meal will fill your home throughout the day. If you're out, it is a comforting aroma to welcome you at the end of a long day from work or running around with the kids.

Turkey chili is a wonderful alternative for people who are trying to reduce red meat in their diets and cut cholesterol. But, let's be honest. I doubt turkey chili will ever win a blue ribbon, or any ribbon for that matter, at a chili cook-off, yet it is a flavorful way to cook this white meat.
